Picture this: a layer of tangy-sweet BBQ sauce, heaps of pickled caramelized onions, vibrant green peppers, and juicy, lightly charred pineapple. But wait, we can't forget the cheese! Melty mozzarella and Monterey Jack create the ultimate cheese pull that will have you reaching for more. In addition, this is a meatless option for dinner! If you want to add chicken, it would be the meat of choice. However, this recipe was made to be vegetarian.


Now let's dive into the details. Here are the ingredients you need:

  • red onions

  • pineapple

  • red wine vinegar

  • long green peppers

  • fresh mozzarella

  • flatbreads

  • BBQ sauce

  • Monterey Jack cheese

Don't worry, HelloFresh won't be sending you the kosher salt, pepper, cooking oil, or olive oil, so make sure you have those on hand. Luckily, you can buy those on hand and have them for future recipes.


How to Make Your Dinner


Start by preheating your oven to 450 degrees and lining a baking sheet with foil (for 4 servings, you'll need two baking sheets). Wash and dry all your produce, then halve, peel, and thinly slice the red onion. Drain the pineapple over a small bowl, saving the juice. In that bowl, mix 1/4 of the onion, half of the vinegar, and a pinch of salt. Set this tasty concoction aside.


Next, heat up a drizzle of oil in a large pan over medium heat. Add the remaining onion and cook, stirring occasionally and adding splashes of water if needed, until the onion is softened. This should take around 6-8 minutes.


While the onion is cooking, go ahead and halve, core, and thinly slice the green pepper into strips. Toss them in a small bowl with a drizzle of olive oil, salt, and pepper. Now, let's dice up that mozzarella into 1/2-inch pieces.


Once the onion is nice and softened, turn up the heat to medium-high and add the pineapple to the pan. Stir it around until the pineapple is lightly browned, which should take around 2-3 minutes. Now add the remaining vinegar and continue cooking until the onion and pineapple become caramelized and jammy. Yum! Season with salt and pepper, then turn off the heat.


Time to assemble these mouthwatering flatbreads! Brush or rub each flatbread with a small drizzle of oil. Take the prepared baking sheet out of the oven (remember, for 4 servings you'll need both baking sheets) and carefully place the flatbreads on it. Now, evenly spread the flatbreads with BBQ sauce, and top them off with the caramelized onion and pineapple, green pepper, Monterey Jack, and mozzarella.


Pop those flatbreads back into the oven on the top rack and let the cheese melt and the edges turn golden brown. This should take about 10-12 minutes. If you're making 4 servings, use both the top and middle racks and switch their positions halfway through baking.


When the flatbreads are done, transfer them to a cutting board and add some of that delicious pickled onion (drain it first!) to taste. Slice the flatbreads into quarters, divide them between plates, and get ready to indulge in these flavorsome treats.

My Rating: I am sucker for pineapple pizza. Traditional or not, I will have any pizza with pineapple so when I saw this recipe I was definitely all down to try it. I do rate this pizza, 7/10 though. Everything was great except the pickled onion for me killed it. I mean, the pizza would have been fine without the pickled onion, I do not see it as a make or break ingredient for the pizza.


Shayne's rating: He rates this 5/10. He liked it but this pizza was once of the recipes where it was like, I had it once and I don't need to have it again. If he does, it would be without the pickled onion as well. It was not a ballpark entree but the meal got us through for the Wednesday December night.

The total of ingredients is for One Pan Cheeseburger Wraps so not completely expensive but to make more you may have to buy more ingredients. I mean, it is not super expensive in ingredients cost but you already have the cost for four servings.
