Create a Kick Ass Muffin from Your Own Backyard

Let us talk about oranges. I mean I grew up with my aunt having an orange tree. She gave us boxes of oranges because her tree produced so many. However, never did I realize what my mom did with all of those oranges.


She was not a juicer, so no fresh orange juice. Not much of a jam maker either. Marmalade was not really a thing in our house. She might’ve given them away but of course, I never knew that. Make orange chicken? Nah. Too far out there. Orange Cranberry Scones? Getting Warmer. Hm. I don’t know. Ate them every day? Yeah… that is more likely. However, now I know what to do if I have an abundance of oranges.


Make fresh orange juice? An option. Make Marmalade? Been there, did that. Orange Chicken? Nah. Too white for that.


Eat them every day? Mm. Maybe. Here is more of a fun way to have some oranges from your own orange tree.


Here are the ingredients I need to make my Vitamin C intake increase:


• 2 cups of flour

• 1/2 cup brown sugar

• 1/4 teaspoon salt

• 1/2 teaspoon baking soda

• 2 teaspoons baking powder

• 1/3 cup orange juice

• 1 egg

• 1/3 cup olive oil

• 2/3 cup sour cream

• 1 tablespoon of orange zest

• 1 teaspoon of vanilla


Orange Glaze

• 1 1/2 cups Confectioners Sugar

• 3 tablespoons Orange Juice, freshly squeezed


A little bit of a different recipe right? That is what I thought, never had an orange-glazed muffin before.


Our Ratings


My Rating: For baking, I would say a 10 out 10. The recipe was easy to follow and did not require actual fruit cutting. The muffins required zest and juice compared to chunks. The glaze recipe matched the muffin base perfectly.


Shayne’s Rating: 8/10. He tried the blueberry and the orange muffin at the same time. The orange taste was not overpowering but you can definitely taste the hint. Shayne is more in favor of the coarse sugar topping compared to the orange glaze on these muffins.


Our Financials


I did my shopping at Walmart and Publix. These ingredients I bought were able to be reused into making these muffins and other recipes. This is what makes me happy about making items at home; reusing ingredients to save money. Basically for all my scones, bread, and muffin recipes, I am utilizing ingredients from those grocers.


Below in the breakdown in financials:



• Flour- $2.49 from Publix

• Brown sugar- $2.17 from Walmart

• Salt- already had the salt

• Baking soda- $0.68 from Walmart

• Baking powder- $0.99 from Publix

• Orange juice- used fresh oranges ($3.94 for the bag)

• Egg- 60 eggs for $5.99 at Walmart

• Olive oil- already had the olive oil

• Sour cream- $2.89 from Publix

• Orange zest- used fresh oranges (same bag listed above)

• Vanilla- already had the vanilla


Orange Glaze

• Confectioners Sugar- already had the confectioners sugar

• Orange Juice (same bag listed above)


Luckily while experimenting with this type of sweet yet tang filled muffin, the ingredients cost was not as high. The total cost for me was under twenty bucks. $19.15 to be exact.

However, like I say in all my posts, I got ingredients to reuse and food I actually can eat if I do not use it all. Healthy or has a good shelf life. Win Win for me!


In addition to low ingredients cost, reusing ingredients is amazing for me! I feel like I am actually not wasting food, feeding myself and my fiancé. Also just using ingredients until I cannot anymore. Works for me. Rather save money on groceries than anything else.


Millennial Cash Back Application Winnings


Let us see how I struck with my four go-to cash back applications.


While using the Ibotta application, I actually struck some luck today. I earned 10 cents back for any ice cream. I take any item offers in such stride. Just because brands are different all over the country, sometimes I do not get to take advantage. Though sometimes those offers come through, so yay!


Fetch Rewards was a better application for me today. I earned 100 points from two receipts. I earned 50 points from each shopping trip to both Walmart and Publix. I scored bonus items that had nothing to do with this recipe.


For walking into Walmart, I got 10 kicks for just walking in to the store and I forgot to turn on my kicks for Publix again. I swear I need to set an alarm so that way I remember. Or have a post it note in my car. Shopkick typically does not have the products I shop for, I earn kicks by walking to the store.


For my penny rewards from Coinout, I earned 15 cents from Publix. For my Walmart receipt, the application cancelled out my two cents I would have earned. So hypothetically I earned 17 cents. Better than other days I have had for sure.


Outcomes and Recommendations


This is a different type of recipe for a muffin. I am used to oranges as an accent to the main dessert such as cranberry orange scones or orange chicken. I have never made a dessert before where oranges were the main ingredient. I feel like marmalade you have to be in the right mood to consume this dessert. I would say instead of making an orange glaze, you should make a sweet vanilla glaze instead.
