We all know about chicken. We have chicken more than we would like to think. Entree, salad, soup, pasta. Baked, fried, sauced, grilled, chopped. The list continues. Though, how fancy can you get? Well, this recipe below changed the way on how I can cook my chicken. I made this chicken piccata for my husband, my friend, and her ex- boyfriend. Thank goodness for food to bring everyone together. Otherwise I do not think we would have met him as soon as we did. and now we don't ever have to see or hear from him again. Oh well, I learned a new recipe. No harm no foul.
The ingredients I used were:
• 1 pound of chicken breast filets
• 1 1/2 cup of flour
• 1 teaspoon of salt
• 1 teaspoon of pepper
• 1 tablespoon of butter
• 1 tablespoon of olive oil
• 4 cloves of garlic, peeled and smashed
• 3/4 cup of vermouth
• 1/2 cup of lemon juice
• 1 tablespoon of capers
• 1 tablespoon of Italian parsley
• 1 lemon slices as garnish
• Cooked angel hair pasta for serving

Shayne and I both gave this rating a 10/10. It will definitely be a repeat in the household. Our friends seemed to enjoy it, they ate it all and there was none left over. I was hoping for some left over for meal prep but I guess when you got a winner, you gotta have all of the chicken dinner.
This meal was enough to cook two pieces of chicken per person. I made this meal for myself, Shayne, my friend, and her new boyfriend. This also was the first time I ever cooked chicken on top of a stove. No one got food poisoning, so I did something right. I also learned that if you see pink, then think. I mean I know sushi is popular but somehow raw chicken is not completely normalized quite yet. The amount of time for prepping and cooking the chicken in total was 40 minutes. Longer than normal, but I was being overly cautious because I never cooked chicken on a stove before.

With this recipe, it definitely is one of the cheapest meals I have ever made. Compared to the others at least. There are many opportunities where you could save money and get the most value out of these ingredients for repeat makings.

• 1 teaspoon of pepper- already had the pepper

• 1 lemon sliced garnish- I bought four lemons for lemon juice and this garnish.
• Cooked angel hair pasta for serving- I used an alternative which was chickpea pasta, $3.44
The total cost for making this recipe was $19.56. It was a great recipe because of the ingredients I already had. Cheaper than other meals I have made with this Gilmore Girls cookbook. I learned when making chicken, the cost of the ingredients depends on how much chicken I do buy. I know that chicken at Sam’s Club is like 4 pounds which is costing more. Compared to Walmart, I aim for at least 1.5- 2 pounds because let us be honest. I live with a 5’11 male and I am a 5’7 female. A pound of chicken will not carry far in our household. Not even on days where we do not exercise. The more stocked, the less you gotta shop.
Those Millennial Cash Back Savings
I got a lot of great deals and savings when making this recipe. For savings, I used Ibotta, ShopKick, and Coinout.
Ibotta saved me 75 cents on the pasta I bought. It was an alternative pasta, it was made out of chickpeas and lentils. You really could not taste the difference.
For Fetch Rewards, unfortunately I did not earn any points for the items that I made for this recipe. I received the normal amount of points which is 25. Nothing extra but majority of the time, I do get extra points. Better than just giving me chump points for sure.
Shopkick earned me 10 kicks because I walked in to Walmart to shop. I do feel like I need to utilize this application more to earn more kicks however during the COVID-19 pandemic may not be the best time. Maybe when everything goes back to normal that would be best.
Finally for Coinout, I earned one penny for scanning the receipt. Hey a penny richer then I was yesterday.
Outcomes and Recommendations
This recipe ended up making a difference for future dinners. The flavor was amazing and it could pair with anything. It changed how I can cook my chicken. Update: I did remake this chicken for Shayne and myself. I used about two pounds of chicken and had leftovers for about 5 days. This chicken piccata recipe is in the vault incase, I blank on what to make for dinner and we need protein. We are carnivores in this household. Well most of the time.
