One Way to Successfully Pass a Drug Test

I do not know about you but lemons definitely remind me of spring and summer seasons. So if you are baking anything lemon, we know what shall be upon us. Lemon curd, lemon squares, lemon meringue pie, lemonade, and of course, lemon poppyseed muffins. However, I making my lemon muffins a little differently.
To all my Seinfeld fans, remember when Elaine Bennis failed a drug test? Do any of you remember what the ingredient was that failed her? Was it pot? Nope. Ecstasy? No. For 90’s sake, crack, heroin, LSD? Nope, nope, nopity nope. It was POPPYSEEDS. I know that is a television reference. Though, I have heard that people have failed for that reason. Now for sake of ease, I did not make lemon poppyseed muffins. Shayne and I work in jobs and schooling, where someone could easily drug test us. To put our minds at ease….we just omitted that ingredient out.
To bring some spring love into the air, I basked my kitchen in the smell of fresh baked lemon muffins.
Here are the ingredients I used to add some spring into my apartment air:
• 2 teaspoons of baking powder
• 3 tablespoons lemon juice
• 2 eggs
• 2 tablespoons of lemon zest
• 1/2 cup of softened butter
• 1 cup of plain yogurt
• 1/4 teaspoon of salt
• 1/2 cup of granulated sugar
• 2 cups of flour
• 1 teaspoon of baking soda
• 1/8 cup of poppyseeds— if you wish to add them to your muffins
• 1 1/2 cups confectioners sugar
• 3 tablespoons lemon juice
Our Ratings
Shayne did not have any of the lemon muffins. I spared him because I knew that he would not be a huge fan. I gave the muffins to his sister. The thing is with these muffins, I tasted them and I did not find them to be my absolute favorite. Hence, giving them away while because of the lack of fandom.
My Rating: For making these muffins, I would rate this recipe a 10 out of 10. No baking fails, no faux pas. The recipe was easy to make and the directions were crystal clear.
The taste of the muffins I will say will be a 7 out of 10. I think for lemon, poppyseeds do make all the difference for lemon. Maybe the flavors of lemon and poppyseed complement and bring out the best in each other. Though because of circumstances, I will wait until we cannot be drug tested.
Chelsea’s Rating: Same rating as myself, 7 out of 10. The muffins themselves were dense. However, I did use sour cream and olive oil. Definitely different ingredients from the usual routine. She thinks they may contribute to the density.
Our Financials
I did my shopping at Walmart and Publix. These ingredients I bought were able to be reused into making these muffins and other recipes. This is what makes me happy about making items at home; reusing ingredients to save money. Basically for all my scones, bread, and muffin recipes, I am utilizing ingredients from those grocers. Below in the breakdown in financials:
• Lemon Zest- used lemon peels from lemons ($3.54 for bag of lemons.)
• Butter- $2.98 at Walmart
• Plain Yogurt-$1.16 at Walmart
• Salt- already had the salt
• Granulated Sugar- $1.98 at Publix
• Flour- $2.49
• Baking Soda- $0.68
• Confectioners Sugar- already had confectioners sugar • Lemon Juice- used lemon juice from lemons($3.54 for bag of lemons.)
The total cost to make these muffins was $9.29.
Not too shabby for making some spring time muffins. Also saved money from the beginning because I am reusing ingredients from previous recipes!

Those Millennial Cash Back Earnings
From 2020-2023, the amount of applications I have gained on my phone has quadrupled. However, during this Gilmore cooking phase of mine, I got my four favorites locked and loaded. Ibotta, Fetch Rewards, ShopKick, and Coinout, my favorites.
While using the Ibotta application, I actually struck some luck today. I earned 10 cents back for any item on a receipt. Ibotta has not had that offer for a while so a happy Monday surprise for me!
Fetch Rewards was a better application for me today. I earned 100 points from two receipts. I earned 50 points from each shopping trip to both Walmart and Publix. Not too shabby for that application.
For walking into Walmart, I got 10 kicks for just walking in to the store. Shopkick typically does not have the products I shop for, I earn kicks by walking to the store. Though, there is an option to scan promoted items to earn more kicks. An option I don’t utilize, however this will help you later!
For my penny rewards from Coinout, I earned 15 cents from Publix. For my Walmart receipt, the application cancelled out my two cents I would have earned. So hypothetically I earned 17 cents. Not too shabby again.
Outcomes and Recommendations
Growing up, I was not a huge fan of muffins. I got used to the idea that they were just ugly cupcakes. Why have a muffin when you can have a cupcake? I mean valid question but now I get it. How great does it feel to eat a freshly baked, lush muffin while basking in the spring and summer sun? You could pair this lovely muffin with some whipped, honey butter or with a lovely, light lemon glaze.
In addition, You can add some fruity sparkling drinks or brunch drinks to have to enjoy along with your muffins. Now go out on your balcony, take a great book, pour yourself a drink, and enjoy your muffins. Remember to also enjoy a cozy cat nap afterwards, it is the perfect way to spend a spring and summer afternoon!
